Mint-Infused Grapefruit Paloma
There’s something about a Paloma that just screams summer. It’s the perfect cocktail for relaxing by the pool or enjoying the sunshine in your backyard. It’s fruity, light, and refreshing.
One of my absolute favorite combinations is that of mint and citrus. They compliment each other so well to create the freshest of flavors. This Mint-Infused Grapefruit Paloma is invigorating, thirst-quenching and something you’ll be enjoying on repeat all summer long.
This recipe begins with creating a mint-infused simple syrup. Simple syrup is a staple for all mixologists and can be used in all different types of cocktails. It is created by combining equal parts water and sugar, and heating the mixture until the sugar is thoroughly dissolved. For our recipe, we’ll add in a few springs of mint while the simple syrups is heating on the stove to infuse the syrup with a natural yet subtle mint flavor.
A traditional Paloma is made using tequila, but I opted to use vodka for this recipe. Vodka doesn’t have as strong of a flavor, and I really wanted the mint to shine through! However, this recipe would work well with both, or you could even try gin if that’s your spirit of choice.

mint-infused simple syrup
1/2 cup sugar
1/2 cup water
2 mint sprigs (about 15-20 leaves)
mint-infused grapefruit paloma
coarse raw sugar
1/4 cup grapefruit juice, freshly squeezed
1/4 cup vodka (our favorite is Tito’s Handmade)
1 Tbs mint-infused simple syrup
splash of tonic water
sliced grapefruit wedges, for garnish

Begin by making the mint-infused simple syrup. Keep in mind that this recipe makes a generous amount of simple syrup, so you will have plenty for future cocktails! Combine the sugar and water in a small saucepan and place over medium-low heat. Stir often, until the sugar is dissolved. Once the sugar dissolves, place the mint sprigs in the saucepan, ensuring they are submerged. As the mixture continues to heat, stir often and muddle or crush the mint with a wooden spoon. After a few minutes, the syrup will begin to boil gently and thicken. Strain out the leaves and pour the syrup into a small jar.
Place a generous amount of raw sugar on a small plate. Run the grapefruit wedges along the rim of each cocktail glass, then dip the glass into the sugar. Place a few ice cubes in each glass.
Place a generous amount of ice in a cocktail shaker. Pour the grapefruit juice, vodka, and simple syrup into the shaker. Shake vigorously for about a minute. Pour into two glasses evenly, then add a splash of tonic water to each glass. Garnish with a slice of grapefruit and a few mint leaves. Enjoy!
